Black bean and cilantro salsa
An incredible salsa, filled with cilantro and other bright flavors. It is also very easy to make and can be whipped up in a few minutes.

Preparation Time: 30 minutes
Ingredients
- 1 can crisp corn
- 1 can black beans
- 1/3 cup chopped onion
- juice of 3 lemons
- 1 tblsp olive oil
- 1/2 cup chopped red bell pepper
- 1/2 cup finely chopped cilantro
- 1 tsp salt
- 1/2 tsp pepper
Steps
- Mix all ingredients together.
- Let rest in refrigerator for at least a few minutes before serving.
If you can mix it ahead of time by a few hours, the flavors will have a chance to “settle” and the vegetables a chance to “cook” in the lemon juice.
This goes great with tortilla chips, quesadillas, and meats.
