Red Pepper Lemon Salad
Red bell, tomatoes, radishes, and red grapes, along with feta cheese because feta cheese is just so good.
Servings: 4
Preparation Time: 20 minutes
Ingredients
- 1 bunch red leaf lettuce
- 2 small tomatoes, chopped
- 1/2 red bell pepper, chopped
- 1/2 cup radishes, chopped
- 1 cup seedless red grapes, halved
- juice of 1/2 lemon
- 1 tblsp olive oil
- 1 tsp paprika
- 1/2 cup feta cheese, diced
- coarse sea salt to taste
Steps
- Mix all ingredients except salt
- Add salt to taste
- Add croutons on the side if desired
This sounds like an odd little salad, and in fact it is. But the swirl of tomato and grape behind the red bell, with the light spiciness of radishes and paprika, make this a mouth-watering lettuce-based salad.
You will want croutons for this salad. Finely chop one garlic clove, heat about a quarter cup of olive oil, and sauté four cups of bread squares and the garlic in the hot oil.
