COCONUT OATMEAL COOKIES ¾ cup soft butter 1 tsp salt 1½ cup light brown sugar ½ tsp baking soda ½ cup granulated sugar 1 tsp vanilla 2 eggs 2½ cups oatmeal 1 cup flour 1 cup coconut 1 tsp baking powder Cream butter and sugar together well. Beat in eggs, one at a time. Sift together flour, baking powder, salt, and baking soda. Mix dry ingredients into batter along with vanilla. Stir in oatmeal and coconut. Drop by teaspoonfuls, about a half-ounce each, onto an ungreased baking sheet. Bake for 10 minutes at 375°. Makes 72. Adapted from “Fruitport Bicentennial Cook Book” (1975).
