ITALIAN FRIED CHICKEN 1 2-3 lb chicken 3 tbsp tomato paste 2 eggs 1 tbsp grated Parmesan ½ cup milk 1 tsp oregano ¾ cup flour ½ tsp pepper 1 tsp salt Cut chicken into serving-sized pieces. Beat eggs, milk, flour, and salt into a batter. Blend in the tomato paste, cheese, oregano, and pepper.
