Dhane patar chatney: cilantro chutney
This very versatile chutney can be quickly prepared and used in a wide variety of situations.

Preparation Time: 10 minutes
Ingredients
- 6 tblsp fresh lemon juice
- 4 tsp sugar
- 2 tblsp freshly-chopped ginger
- 2 tsp chopped garlic
- 1 tsp freshly chopped green chili
- 2 tblsp dried shredded coconut
- 1/4 tsp salt
- 2 cups firm-packed cilantro leaves
Steps
- Place all ingredients and half of the cilantro, into a blender.
- Blend just until ground.
- Add the remaining cilantro and blend again.
This is a variation on a dish from Bharti Kirchner’s wonderful Healthy Cuisine of India. This sharp, lemony chutney goes well with just about everything, from rice dishes to tortillas and quesadillas. Try dropping a little in your next soup!
